Greek salsa

All the traditional flavors of a Greek salad in salsa form

Ingredients

  • 1 cup diced tomato
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 2 tbsp chopped parsley
  • 1 tbsp fresh lemon juice (about 1/2 a lemon squeezed)
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 teas oregano
  • 1/4 teas sea salt

Instructions

  1. Combine all the tomato, cucumber, onion and parsley in a small bowl
  2. Combine the lemon juice, olive oil, vinegar, oregano and salt together and pour over the salsa vegetables. Stir and enjoy!
  3. Keep covered in refrigerator for up to 3 days
