Ingredients Needed

What is Wild Rice?
Believe it or not, wild rice is not technically rice at all but instead is an aquatic grass. It is grown primarily within North America. It differs from white and brown rice in that it is longer, has a thicker husk, is very rigid and has strong nutty flavor. That same nutty taste and chewy texture contribute to make this such a delcious and great soup perfect to enjoy during soup season. Nutty wild rice is most commonly used in soups, casseroles and stuffing dishes thanks to its great flavor and nutrients.

If looking for a vegan soup, swap out chicken broth for vegetable broth and omit the chicken breast. Different rice varieties such as white rice or brown rice could be used as oppossed to a wild rice blend, but cooking time will likely vary as will the flavor profile.

Ingredients
1 cup diced white or yellow onion
1 cup diced celery
1 cup diced carrot
1 cup uncooked wild rice
2 cups cooked diced chicken breast
8 cups chicken broth
1 tsp salt
2 bay leaves
½ teaspoon rosemary
½ teaspoon oregano
½ teaspoon pepper
Instructions
- Add all ingredients except the chicken to the crockpot and cook on low for 7-8 hours or high for 3-4 hours. Taste rice to ensure cooked. Different varieties of wild rice can take longer to cook than others.
- Add diced chicken to crockpot and stir and let meld with soup for 15 minutes before eating.
- Serve immediately or refrigerate up to one week in airtight container. Freeze for up to two months.
