A hearty and delicious soup that comes together in a snap. Packed with protein, this easy dish is perfect for soup season. 

Ingredients

1 cup diced white or yellow onion

1 cup diced celery

1 cup diced carrot

1 cup uncooked wild rice

2 cups cooked diced chicken breast

8 cups chicken broth

1 tsp salt

2 bay leaves

1/2 teaspoon rosemary

1/2 teaspoon oregano

1/2 teaspoon pepper

Instructions

  1. Add all ingredients except the chicken to the crockpot and cook on low for 7-8 hours or high for 3-4 hours. Taste rice to ensure cooked. Different varieties of wild rice can take longer to cook than others.
  2. Add diced chicken to crockpot and stir and let meld with soup for 15 minutes before eating.
  3. Serve immediately or refrigerate up to one week in airtight container. Freeze for up to two months.
