
This hearty sauce uses the traditional mirepoix base for Italian bolognese along with sweet San Marzano crushed tomatoes. Lean ground chicken and lentils bump up the protein and fiber while keeping fat grams low.
Serve over traditional pasta or add even more fiber to your plate by serving over Goodles pasta.

- 2 Tablespoons olive oil
- ½ onion, finely minced
- 7 cloves of garlic, minced
- 1 rib of celery, finely minced
- 1 carrot, grated
- 1 Tablespoon + 1 teaspoon of basil
- 1 teaspoon oregano
- 1 pound 92% lean ground chicken
- 28 ounces can San Marzano crushed tomatoes
- 7.5 ounces tomato sauce
- 1 bay leaf
- 1 cup lentils, cooked
- Additional salt to taste
Instructions
- In a large saucepan, heat olive oil over medium heat
- Add onion and garlic to saucepan and sauté for 1 minute
- Add celery, carrot, basil and oregano to saucepan and sauté until slightly softened, about 2 minutes
- Add chicken and cook until no longer pink.
- Add tomatoes, tomato sauce, bay leaf and lentils to the saucepan.
- Let simmer for 20 to 30 minutes. Add additional salt to taste.
