The food that defined us millennials in the 2010s is now revamped with more fiber as we hit our late 30s and early 40s. Avocado toast but make it lighter without sacrificing the fiber. This is my favorite volume snack that is slightly savory, slightly sweet and so filling. Just like the avocado toast of old, make it your way by adding fresh tomato, a balsamic drizzle and a bit of arugula. You can't go wrong.
Hot Tip....avocados are expensive and the clock of their very short lifespan starts ticking the moment you bring it home from the store. Blink and they've spoiled. That's why I opt to use Trader Joe's single serve guacamole packets as they stay fresh and are use as you need.
