
I like to call this salad the gold mine salad because it's chockfull of yummy things. You don't need to go mining through the salad to find a piece of cheese or bacon. Every forkful has something yummy, guaranteed to strike gold with every bite.
This is a play on a traditional Italian Grinder Salad that's typically full of deli meat, pepperoni and a heavier dressing. I've lightened this salad up and added some fiber friendly foods including kale and garbanzo beans and swapped turkey bacon for pepperoni. The dressing is light and fresh, allowing all the gold chunks of veggies, cheese, sweet peppers and bacon to shine through.
A word on the Sweet and Tangy peppers....these can be a bit hard to find. My sister in law introduced me to these peppers and I spent far too much on Amazon to acquire them. Was it worth it...yes! They are bursting with flavor and unlike any other sweet pepper I've had. Check your local grocer for jarred Biquinho Peppers or order them from Amazon here.

Ingredients
Dressing
- 2 teaspoons lemon juice
- 1 teaspoon parmesan cheese, grated
- 1 teaspoon olive oil
- Pinch of crushed red pepper
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- Additional salt to taste
Salad
- 3 cups iceberg lettuce, finely chopped
- 2 cups Tuscan kale, destemmed and finely chopped
- 2 Tablespoons red onion, diced
- ¼ cup cucumber, diced
- 7 DeLallo Sweet n Tangy Pepper Drops (Biquinho peppers)
- 1 light string cheese stick, diced
- ¼ cup skinless, boneless rotisserie chicken breast, diced
- 1 slice Turkey bacon, cooked and diced
- ¼ cup garbanzo beans
- 2 Tablespoons red pepper, diced
Instructions
- In a small bowl, mix together dressing ingredients
- In a large bowl, combine all salad ingredients and toss in dressing. Add additional salt to taste if desired
