    High Fiber Burrito

    A breakfast burrito that's high fiber and high protein? Do miracles exist? This is a good one, folks and hubby approved. Fiber comes from using Mission Whole Wheat tortillas, pinto beans, roasted skin-on potatoes and an insane avocado lime salsa made with fresh avocado, lime, cilantro and jalapeño. Meal prep these for easy, to-go breakfasts that will keep you feel full and fueled. 13 grams of fiber, 17 grams of protein per burrito!

    Ingredients

    Scale

    Roasted Potatoes

    3 small russet potatoes, washed, but not peeled, cut into 1" chunks

    2 Tablespoons olive oil

    2 teaspoon smoked paprika

    1 teaspoon kosher salt

    1 teaspoon onion powder

    1 teaspoon garlic powder

    1 teaspoon chili powder

    1 teaspoon brown sugar

    Avocado Lime Salsa

    1 cup avocado, diced

    ½ cup water

    ½ cup cilantro

    Juice of 1 lime

    ½ of 1 jalapeno (remove seeds if prefer less spicy)

    1 garlic clove

    ¾ teaspoon kosher salt

    ½ teaspoon coriander

    ½ teaspoon chili powder

    ¼ teaspoon cumin

    To Assemble the Burrito Ingredients

    1 Mission Whole Wheat Tortilla (not the organic version)

    1 egg, scrambled

    2 Tablespoons egg white, scrambled

    2 Tablespoon pinto beans

    1 slice cooked bacon, crumbled

    1 Tablespoon cheddar cheese

    ¼ cup roasted potatoes

    1 Tablespoon avocado lime salsa

    Instructions

    Roasted Potatoes: 

    1. Preheat oven to 425.
    2. Toss potatoes in olive oil, spices and brown sugar
    3. Roast potatoes in single layer on baking sheet for 20-25 minutes

    Avocado Lime Salsa

    1. Blend all ingredients until smooth

    Burrito 

    1. Build 1 burrito with 1 tortilla, add cheese and pinto beans. Zap in microwave
    2. Add crumbled bacon, scrambled egg and egg white, potatoes and salsa
    3. You will have plenty of extra potatoes and salsa for more burritos!
