A hearty, fiber-packed salsa that adds a bit of crunch to any Mexican or Southwest inspired dish. 

Ingredients

  • 1 15.5 ounce can black beans, drained and rinsed
  • 5 ounces jicama, diced
  • 1/2 cup red onion, minced
  • 1/2 cup fire roasted corn
  • 1/2 of a jalapeno, finely minced
  • 1/4 cup cilantro, minced
  • 1 Tablespoon lime juice
  • Salt to taste

Instructions

  1. Mix all ingredients together in a medium size bowl. Serve with chips, over tacos or burrito bowls.
